Colorful Veggie Pasta Dish

  • Cook 3-4 cups dry colored spiral macaroni according to package directions. (Don't overcook)  Drain, rinse with cold water, set aside.

 

  • Meanwhile, cut up fresh vegetables: 

-1 small green zucchini

-1 small yellow zucchini

        -1 small white flower squash

-1 button garlic

-½ of a large onion

        -½ of a red bell pepper

-½ of a green bell pepper

-½ of a yellow bell pepper

-2 toasted Anaheim peppers (peeled and chopped)

-1 small jalapeño chile

-3 large carrots

-3-4 large tomatoes chopped up (skin removed)

 

 Combine all vegetables in a large frying pan. Cover and cook until vegetables are about half cooked.  (Do not add oil or water)  Add pasta, salt and pepper to taste.  Let cook about 5 more minutes so all of the flavors combine with the pasta.   It should be moist, not dry.  Serves about 6-8.

 

*Note: You can also add fresh green beans, asparagus or peas. This dish is great with all kinds of vegetables. The vegetables here taste great when their flavors combine.
