Green Salad with Mango and Tomato


4 Servings

 

4 cups packed mesclun (mixed baby salad greens), about 1⁄4 lb.
1 large ripe tomato
1 ripe mango, peeled and sliced
2 Tbs. fresh lemon juice
1⁄2 tsp. salt
2 Tbs. olive oil

Directions:
1. Arrange greens evenly among 4 serving plates.
2. Slice off top and bottom of tomato and discard. Slice tomato into four 1⁄2-inch slices. Place one slice each in center of greens. Arrange mango slices over tomato slices.
3. In small bowl, mix lemon juice, salt and freshly ground pepper to taste. Whisk in oil. Drizzle dressing over salads and serve.
