Corn and Rajas Salsa

*3 ears of corn
*1/4 c. water
*1 Tbs. peanut oil
*1/2 c. julienned white onion
*5 fresh red Fresno or red jalapeno chiles, roasted, peeled, seeded & julienned.
*5 fresh green jalapeno chiles, roasted, peeled, seeded & julienned.
*1 c. fresh cilantro leaves.
*1 Tbs fresh lime juice.
*1 ts. ground toasted coriander seed
*1/4 tsp.salt
 
Cut the corn kernels from the cobs. Place in a saute pan with the water and cook for 2-3 min. over a medium heat until tender and water has evaporated. Transfer to mixing bowl. Heat the oil in a saute pan and saute onion over medium heat for 8 minutes or until slightly brown. Transfer to the mixing bowl. Add the roasted chiles and remaining ingredients and thoroughly combine.
