- 2-3 cloves minced
garlic
- 2-3 large bell
peppers (red and green chopped)
- 2 large onions
(chopped)
- 1 & ½ Tbs.
chile powder
- 2 tsp. cumin
- 1/8 tsp. cayenne
- 1 can stewed
tomatoes with juice
- 27 oz. vegetable
broth
- 2 cans kidney
beans
- 2 c. salsa
- 10 oz. frozen
corn
- 1 tsp. pepper
- ¾ tsp. salt
Combine all ingredients in large pan. Bring to a rolling boil,
lower heat and let simmer for a few minutes. Serve with grated soy cheese, lime and tortilla chips. (Have these things set
out and let each individual add them to their own bowl.)
