Santa Fe Soup

  • 2-3 cloves minced garlic
  • 2-3 large bell peppers (red and green chopped)
  • 2 large onions (chopped)
  • 1 & ½ Tbs. chile powder
  • 2 tsp. cumin
  • 1/8 tsp. cayenne
  • 1 can stewed tomatoes with juice
  • 27 oz. vegetable broth
  • 2 cans kidney beans
  • 2 c. salsa
  • 10 oz. frozen corn
  • 1 tsp. pepper
  • ¾ tsp. salt

 

Combine all ingredients in large pan. Bring to a rolling boil, lower heat and let simmer for a few minutes. Serve with grated soy cheese, lime and tortilla chips. (Have these things set out and let each individual add them to their own bowl.)
